Chop onion, bell pepper, and cilantro; set aside.
Heat a medium nonstick skillet, lightly coated with spray, over medium-high heat. Add onion and bell pepper; cook 4 to 5 minutes, stirring frequently, until onion is translucent.
Add chicken, tomato paste, cumin, coriander, salt, and black pepper. Cook for 6-8 minutes, until meat is cooked thoroughly.
Divide chicken mixture evenly between corn tortillas. Garnish with cilantro and cheese; serve immediately.
