Bookmark This One-Pot Chicken Taco Recipe for Taco Tuesday

The classic taco — loaded with beef, cheese, sour cream, and guac — sure does hit the spot. It doesn’t do so well at balancing your macros, though. Takeout tacos (especially the fast-food kind) often use 80/20 ground beef. Between that and all the toppings, you’re getting mostly fat and not much else.

But we would never suggest you give up tacos. After all, we even have a recipe for vegan breakfast tacos. So next time you celebrate Taco Tuesday or get a sudden craving for street tacos, whip up these tasty chicken tacos.

These tacos use ground chicken instead of beef and get a punch of flavor and nutrients from bell pepper. Each serving contains 12 grams of fat and 38 grams of satiating protein.

Chicken Taco Ingredients

  • ½ white onion
  • 1 yellow bell pepper
  • 1 Tbsp. cilantro
  • Nonstick cooking spray
  • 4 oz. raw ground 93% lean chicken
  • 1 Tbsp. tomato paste
  • ½ tsp. ground cumin
  • ½ tsp. ground coriander
  • 1 dash sea salt (or Himalayan salt)
  • 1 dash ground black pepper
  • 2 each unsalted 6″ corn tortilla
  • 1 oz. shredded Mexican cheese

This recipe is simple and the base has very few ingredients — and that’s where the spices come in. The spices and tomato paste soak into the ground chicken so that every bite is as delicious as possible. But you’ll notice that nothing’s spicy here, which makes it easier to whip up a large batch for the whole family.

Feel free to mix things up with your chicken, too. If weeknight cooking is tough for you because of your schedule, you can always big-batch baked chicken breasts over the weekend and use it for tacos and Greek chicken bowls throughout the week. Just simmer your chicken breasts with tomato paste and spices, plus a little salt-free broth to make sure your cooked chicken stays moist.

Ground Chicken Bell Pepper Tacos

These healthy, ground chicken tacos are packed full of flavor without all the extra fat.

Ingredients

  • ½ white onion
  • 1 yellow bell pepper
  • 1 Tbsp. cilantro
  • Nonstick cooking spray
  • 4 oz. raw ground 93% lean chicken
  • 1 Tbsp. tomato paste
  • ½ tsp. ground cumin
  • ½ tsp. ground coriander
  • 1 dash sea salt
  • 1 dash ground black pepper
  • 2 each unsalted 6" corn tortilla
  • 1 oz. shredded Mexican cheese

Instructions

  1. Chop onion, bell pepper, and cilantro; set aside. 

  2. Heat a medium nonstick skillet, lightly coated with spray, over medium-high heat. Add onion and bell pepper; cook 4 to 5 minutes, stirring frequently, until onion is translucent.

  3. Add chicken, tomato paste, cumin, coriander, salt, and black pepper. Cook for 6-8 minutes, until meat is cooked thoroughly. 

  4. Divide chicken mixture evenly between corn tortillas. Garnish with cilantro and cheese; serve immediately.
