Gluten-Free Pumpkin Cookies

Ingredients

  • Nonstick cooking spray
  • 2 large bananas
  • ½ cup pumpkin puree
  • 2 large eggs
  • ¼ cup pure maple syrup
  • 1 tsp. pure vanilla extract
  • 3 cups dry rolled oats
  • ¼ cup gluten-free flour
  • 1 tsp. baking soda
  • 1 tsp. pumpkin pie spice

Instructions

  1. Preheat oven to 350° F.

  2. Line a large baking sheet with parchment paper; lightly coat with spray. Set aside.

  3. Add bananas to a large bowl; mash well. Add pumpkin, eggs, maple syrup, and extract; stir to combine.

  4. Add oats, flour, baking soda, and pumpkin pie spice; mix well.

  5. Using clean hands, form dough into 25 equal balls; place on prepared sheet. Gently tap bottom of baking sheet to spread cookies.

  6. Bake for 12 to 15 minutes; remove to a cooling rack. Let cool for 5 minutes. Enjoy!
