Ground Chicken Bell Pepper Tacos

Ingredients

  • ½ white onion
  • 1 yellow bell pepper
  • 1 Tbsp. cilantro
  • Nonstick cooking spray
  • 4 oz. raw ground 93% lean chicken
  • 1 Tbsp. tomato paste
  • ½ tsp. ground cumin
  • ½ tsp. ground coriander
  • 1 dash sea salt
  • 1 dash ground black pepper
  • 2 each unsalted 6" corn tortilla
  • 1 oz. shredded Mexican cheese

Instructions

  1. Chop onion, bell pepper, and cilantro; set aside. 

  2. Heat a medium nonstick skillet, lightly coated with spray, over medium-high heat. Add onion and bell pepper; cook 4 to 5 minutes, stirring frequently, until onion is translucent.

  3. Add chicken, tomato paste, cumin, coriander, salt, and black pepper. Cook for 6-8 minutes, until meat is cooked thoroughly. 

  4. Divide chicken mixture evenly between corn tortillas. Garnish with cilantro and cheese; serve immediately.
