Rainbow Smoothie Bowl

A delicious, fruit-filled smoothie perfect for celebrating Pride!

Ingredients

  • ½ large ripe banana
  • 2 green grapes
  • 1 small mandarin orange
  • ½ cup unsweetened almond milk
  • 1 cup ice
  • ¾ cup reduced-fat (2%) Greek yogurt 
  • ¾ cup cauliflower rice
  • 1 tsp. pure vanilla extract
  • 9 fresh (or frozen) raspberries
  • 6 fresh (or frozen) blueberries
  • 2 tsp. unsweetened shredded coconut

Instructions

  1. Slice grapes into coins, peel mandarin. Set aside.

  2. Place almond milk, ice, yogurt, banana, cauliflower, and extract in blender; cover. Blend until smooth.

  3. Pour smoothie in a medium bowl. Arrange the raspberries, mandarin, grapes, and blueberries into an arch. Sprinkle with coconut; serve immediately.
