Double Chocolate Waffles

Ingredients

FOR TOPPING

  • 1 cup reduced-fat (2%) plain Greek yogurt
  • 1 Tbsp. pure maple syrup
  • ½ tsp. pure vanilla extract

FOR WAFFLES

  • Nonstick cooking spray
  • 1 cup gluten-free flour
  • 2 scoops LADDER Plant-Based Nutrition Shake
  • ¼ cup cacao powder
  • ½ tsp. baking powder
  • 2 large eggs
  • ¼ cup unsweetened almond milk

Instructions

  1. Preheat waffle iron; lightly coat with spray.

  2. To make topping, add yogurt, maple syrup, and extract to a small mixing bowl; stir well to combine. Set aside.

  3. To make waffles, add flour, Plant-Based Nutrition Shake, cacao powder, and baking powder to a medium mixing bowl; stir to combine.

  4. In a separate medium bowl, add eggs and milk; whisk to combine.

  5. Add milk mixture to flour mixture; stir until well combined.

  6. Pour batter (approximately ¼ cup) into waffle iron; cook for 2 to 3 minutes, or until golden brown. Remove waffle to a plate. Repeat with remaining batter; lightly coat waffle iron with spray each time.

  7. Top each waffle with 2 Tbsp. yogurt mixture.

Recipe Notes

  • Optional: Top each waffle with a few pieces of sliced strawberries or berries of choice.
