Preheat waffle iron; lightly coat with spray.
To make topping, add yogurt, maple syrup, and extract to a small mixing bowl; stir well to combine. Set aside.
In a separate medium bowl, add eggs and milk; whisk to combine.
Add milk mixture to flour mixture; stir until well combined.
Pour batter (approximately ¼ cup) into waffle iron; cook for 2 to 3 minutes, or until golden brown. Remove waffle to a plate. Repeat with remaining batter; lightly coat waffle iron with spray each time.
Top each waffle with 2 Tbsp. yogurt mixture.
