Line a baking sheet with parchment paper; set aside.
Place dates, peanut butter, Ladder Protein, almond flour, ¼ cup cacao powder, and extract in a food processor (or high-power blender); pulse, scraping down sides as needed, until a smooth dough forms.
Fold in cacao nibs.
Using clean hands, shape mixture into 20 walnut-sized balls; place on prepared baking sheet.
Sprinkle protein balls evenly with remaining 1 tsp. cacao powder.
Refrigerate balls for at least 20 minutes, or until firm.
