Ingredients

  • nonstick cooking spray
  • 3 large ripe bananas
  • 2 large eggs
  • ½ cup unsweetened apple sauce
  • 1 tsp. pure vanilla extract
  • ½ cup coconut flour
  • ¼ cup tapioca flour
  • 1 tsp. ground cinnamon
  • ½ tsp. baking soda
  • ¼ tsp. baking powder
  • ¼ tsp. sea salt or Himalayan salt
  • ½ cup semi-sweet chocolate chips

Instructions

  1. Preheat oven to 350° F.

  2. Line a bread pan with parchment paper; lightly coat with spray.

  3. Place bananas in a large mixing bowl; mask with the back of a fork. Add eggs, apple sauce, and extract; whisk to combine.

  4. In a separate medium mixing bowl, add coconut flour, tapioca flour, cinnamon, baking soda, baking powder, and salt; stir to combine.

  5. Pour banana mixture into coconut flour mixture; mix well. Fold in chocolate chips.

  6. Pour batter into prepared pan; bake for 45 to 50 minutes, or until toothpick inserted into center comes out clean.

  7. Cool for 5 minutes; turn loaf out onto cooling rack. Let cool completely before cutting into ten equal slices.
