  • nonstick cooking spray
  • 1 1/2 cups unsweetened almond milk
  • 2 large bananas mashed
  • 2 large eggs lightly beaten
  • 1 Tbsp honey
  • 1 tsp pure vanilla extract
  • 2 1/2 cups dry rolled oats
  • 1 Tbsp ground cinnamon
  • 1 1/2 tsp baking powder
  • 3/4 cup chopped pecans
  • 1/4 cup unsweetened dried cranberries


  1. Preheat oven to 350°F.

  2. Lightly coat a 12-cup muffin tin with cooking spray. Set aside.

  3. Combine almond milk, bananas, eggs, honey, and extract in a large bowl; mix well. Set aside.

  4. Combine oats, cinnamon, and baking powder in a medium bowl; mix well.

  5. Add oat mixture to liquid mixture; mix well.

  6. Evenly divide out mixture between prepared muffin cups.

  7. Top evenly with walnuts and cranberries.

  8. Bake for 26 to 30 minutes, or until golden brown and a toothpick inserted into the center comes out clean.

  9. Serve immediately, or store refrigerated in an airtight container for up to 5 days.
