Ingredients

  • 2 tsp. olive oil
  • 1 medium onion chopped
  • 1 medium green bell pepper chopped
  • 4 cloves garlic crushed
  • 1 (28-oz.) can crushed tomatoes
  • 1 (15-oz.) can pinto beans drained, rinsed
  • 1 (15-oz.) can white (cannellini) beans drained, rinsed
  • 1 Tbsp. ground chili powder or to taste
  • ½ tsp. dried oregano
  • ½ tsp. ground cumin
  • ¼ tsp. sea salt or Himalayan salt

Instructions

  1. Heat oil in medium saucepan over medium-high heat.
  2. Add onion and bell pepper; cook, stirring frequently, for 5 to 6 minutes, or until onion is translucent.

  3. Add garlic; cook, stirring frequently, for 1 minute.

  4. Add tomatoes, beans, chili powder, oregano, cumin, and salt. Bring to boil, stirring occasionally. Reduce heat to medium-low; cook, covered, stirring occasionally, for 30 minutes.
