Blueberry Buckle Granola

Ingredients

  • ¼ cup pure maple syrup
  • 2 Tbsp. + 2 tsp. extra-virgin organic coconut oil melted
  • 1 tsp. pure vanilla extract
  • 2 cups dry old-fashioned rolled oats
  • 2 cups fresh blueberries
  • ½ cup slivered raw almonds
  • 1 tsp. ground cinnamon
  • 1 tsp. sea salt or Himalayan salt

Instructions

  1. Preheat oven to 350° F.
  2. Line baking sheet with parchment paper. Set aside.

  3. Combine maple syrup, oil, and extract in a small bowl; whisk to blend. Set aside.

  4. Combine oats, blueberries, almonds, cinnamon, and salt in a large bowl; toss gently to blend. 

  5. Add syrup mixture; toss to evenly coat oat mixture. Place on prepared baking sheet.

  6. Bake for 20 minutes, stirring twice during baking. 

  7. Cool granola completely, stir, and break into pieces (if needed). 

Recipe Notes

Store in an airtight container for 1 to 2 weeks.
