Preheat oven to 400° F.
Slice shallot and finely chop garlic. Set aside.
Season pork on both sides with salt, pepper, and paprika.
Place a medium cast-iron skillet over medium high heat. When pan is very hot, add ghee. Coat pan with ghee; add pork, shallot, and garlic. Stir shallot and garlic occasionally, but do not move pork as it sears for 2 to 3 minutes, until golden brown on one side.
Turn pork over; spoon shallot and garlic on top of pork. Sprinkle with thyme; bake for 10 to 12 minutes, or until pork reaches an internal temperature of 145° F.
Remove pork from pan; set aside to rest for five minutes before serving.
