Garlic and Shallot Baked Pork Chop

Ingredients

  • 5 oz. boneless pork chop
  • 1 medium shallot
  • 2 cloves garlic
  • ¼ tsp. sea salt or Himalayan salt
  • ¼ tsp. ground black pepper
  • ¼ tsp. ground paprika
  • 1 tsp. fresh thyme
  • 1 tsp. ghee

Instructions

  1. Preheat oven to 400° F.

  2. Slice shallot and finely chop garlic. Set aside.

  3. Season pork on both sides with salt, pepper, and paprika.

  4. Place a medium cast-iron skillet over medium high heat. When pan is very hot, add ghee. Coat pan with ghee; add pork, shallot, and garlic. Stir shallot and garlic occasionally, but do not move pork as it sears for 2 to 3 minutes, until golden brown on one side.

  5. Turn pork over; spoon shallot and garlic on top of pork. Sprinkle with thyme; bake for 10 to 12 minutes, or until pork reaches an internal temperature of 145° F.

  6. Remove pork from pan; set aside to rest for five minutes before serving.
