Slice whole sweet potato lengthwise to create two ¼-inch-thick slices; arrange slices
on prepared baking sheet. Bake for 15 to 18 minutes, turning once, until
lightly browned on both sides and soft in the center.
Spread almond butter evenly on sweet potato slices.
Peel and slice banana; top almond butter evenly with banana. Serve immediately.
To prep sweet potato slices ahead, store refrigerated in an airtight container for up to four days. When ready to serve, place sweet potato slices in a toaster or toaster oven and toast until crisp and warmed through.
