No-Bake Gingerbread Balls

Ingredients

  • 7 pitted dates
  • ¼ cup crystallized ginger
  • ½ cup pecans
  • ¾ cup unsweetened shredded coconut divided use
  • 1 Tbsp. all-natural almond butter
  • 1 Tbsp. molasses
  • ½ tsp. ground ginger
  • ¼ tsp. cinnamon

Instructions

  1. In the bowl of a food processor, combine dates, ginger, pecans, and ¼ cup coconut until coarse crumbs form.

  2. Add almond butter, molasses, ginger, and cinnamon and pulse until well mixed.

  3. Using clean hands, roll into tablespoon-sized balls; roll in remaining ½ cup coconut.

  4. Place in refrigerator to chill for 20 minutes or more before serving. Store in a tightly sealed container in the refrigerator for up to five days.
