Ingredients

  • 2 oz goat cheese
  • 2 Tbsp. No Sugar Added Cranberry Sauce see separate recipe
  • 8 slices sprouted whole grain bread toasted
  • 1 cup raw baby spinach
  • 8 oz sliced turkey breast skinless
  • 3/4 cup Vegan stuffing at room temperature; see separate recipe

Instructions

  1. Preheat oven to 325 F.

  2. In a small bowl, mix together the goat cheese and cranberry sauce until thoroughly combined.

  3. Smear 8 slices toasted bread with cranberry and cheese spread.

  4. Arrange baby spinach leaves atop the cranberry spread.

  5. Top 4 slices of bread with turkey, evenly dividing the turkey among sandwiches.

  6. Spread stuffing equally atop the turkey and top the 4 prepared open sandwiches with the 4 remaining slices of cranberry- goat cheese toast.

  7. Place the sandwiches in the oven for about 5-8 minutes, or until warm.
