Vegan Lentil Burger Ingredients

  • ½ cup lentils
  • ¾ cup low-sodium vegetable broth
  • 2 Tbsp. ground flax seeds
  • 6 Tbsp. water
  • ¼ cup unsalted walnut halves
  • 1 red bell pepper
  • 1 red onion, divided use
  • 2 Tbsp. whole wheat breadcrumbs
  • 1 tsp. garlic powder
  • ½ tsp. ground cumin
  • ½ tsp. ground smoked paprika
  • 4 whole wheat hamburger buns
  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. vegan mayonnaise
  • 2 cups fresh baby spinach, divided use

This vegan burger recipe starts with nutty and filling lentils, which offer plant-based protein and fiber. In fact, there’s about 15 grams of fiber and 18 grams of protein in just one cup of cooked lentils.

We also add flax seeds, veggies, walnuts, and flavorful spices like cumin and paprika.

We top our vegan lentil burger with vegan mayonnaise, mustard, spinach, and onion for added crunch. All of this combines to an under 350 calorie meal with 6 grams of fiber, 15 grams of protein, no added sugar, and only 1 gram of saturated fat. How’s that for comfort foods.

Vegan Lentil Burgers

This vegan burger, made of lentils and other nutritious ingredients, packs a punch of protein and is seriously tasty.

Ingredients

  • ½ cup lentils
  • ¾ cup low sodium vegetable broth
  • 2 Tbsp. ground flax seeds
  • 6 Tbsp. water
  • ¼  cup unsalted walnuts halves
  • 1 red bell pepper
  • 1 red onion, divide use
  • 2 Tbsp. whole wheat breadcrumbs
  • 1 tsp. garlic powder
  • ½ tsp. ground cumin
  • ½ tsp. ground smoked paprika
  • 4 whole wheat hamburger buns
  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. vegan mayonnaise 
  • 2 cups fresh baby spinach, divided use

Instructions

  1. Preheat oven to 350° F.

  2. Line a large baking sheet with parchment paper. Spray with nonstick cooking spray.

  3. Cook lentils. Add broth and lentils to a small pot, bring to a boil, simmer on low for 8 to 10 minutes. Remove from heat; set aside.

  4. Make flax egg: combine flax seeds and warm water; set aside for 5 minutes. 

  5. Crush walnuts with a mortar and pestle; set aside.

  6. Chop bell peppers into ¼-inch cubed pieces. Take ¾ onion, slice into thin rings; take the other ¼ onion and chop into ¼-inch cubed pieces; set aside. 

  7. In a large bowl, add flax egg, walnuts, bell pepper, cubed onion, lentils, breadcrumbs, garlic powder, and cumin, mix until combined. Divide lentil mixture into 4 even portions and form into a round patty shape. Place patties on baking sheet, bake for 30 to 35 minutes. Let patties cool for 1-2 minutes.

  8. To build burger, place 1 whole wheat bun on a serving plate, spread mustard and vegan mayonnaise evenly on bun; add ½ cup spinach, lentil patty, sliced onion, and top with remaining bun. Serve immediately.

Tips:

  • If you do not have a mortar and pestle, you can use a resealable plastic bag and rolling pin to crush the walnuts.
  • Do not assemble the burger too soon. Allow the lentil patties to set after baking to avoid a crumbly mess.
