  1. Place 3 cups watermelon and 2 tsp. lime juice in a blender or food processor and blend to a puree.
  2. Stir in 1 Tbsp. chopped fresh mint.
  3. Pour watermelon mixture into a loaf pan and place in the freezer.
  4. Scrape the frozen corners of the pan to the center every 30 to 40 minutes or until mixture is fully frozen and fluffy.
  5. Serve in a small bowl or a cup.
