Try Our Super-Easy, Protein-Packed S'mores Ice Cream Recipe
We love experimenting in the kitchen, which is why we’ve reinvented everything from lemon loaf to vanilla mug cake. For our s’mores ice cream recipe, we’ve upgraded a basic nice cream (vegan ice cream made with bananas) with Openfit Plant-Based Nutrition Shake and flavors inspired by an outdoorsy classic.
The best part? Our s’mores-inspired recipe doesn’t require building a campfire or slathering on bug spray. All you need is a few simple ingredients, a nonstick pan, and a food processor or high-powered blender. The only tiny bit of prep is freezing banana chunks at least four hours before you blend.
The original, “moreish” treat, Some Mores, or s’mores, first appeared in Tramping and Trailing With the Girl Scouts back in 1927 with the wise advice, “even though it tastes like ‘some more’ one is really enough.” The same could be said about our recipe.
Our s’mores ice cream recipe does have some natural sweetener, but it offers a less-sweet, grown-up version of the all-American dessert you loved as a kid. It’ll recharge you at snacktime or help you power through a deadline without the gooey mess.

S'mores Protein Nice Cream
A healthy, protein-packed s'mores ice cream to satisfy your sweet tooth without ruining your fitness goals!
Peel banana; cut into chunks. Place in resealable plastic bag; freeze for 4 hours, or until completely frozen.
To make toasted marshmallow flavoring, heat a small nonstick pan over low heat; add maple syrup. Cook, stirring constantly, for 1 to 2 minutes, until bubbles form and syrup is caramelized but not burnt; remove from heat. Add water; mix well.
Place banana, Openfit Chocolate Plant-Based Nutrition Shake, almond milk, maple syrup mixture, and extract in a food processor or high-powered blender; cover. Pulse for 2 to 3 minutes, or until very smooth, scraping down sides as needed. Add more liquid, if needed, one Tbsp. at a time until desired consistency is reached.
Divide mixture evenly between two small bowls; garnish evenly with crushed graham crackers. Or, store in an airtight container in freezer for up to 4 days until ready to eat. If frozen, set out at room temperature for 15 minutes to soften before serving.

Ingredients For S’mores Ice Cream
Instead of marshmallows and sticks, we’re “toasting” maple syrup. When you hold marshmallows over a campfire, the toasty flavor comes from sugar caramelizing. To achieve that same yummy flavor, we heat maple syrup to intensify its natural caramelized flavor.
