Egg White Omelet with Spinach and Broccoli

A goal of mine has been to make the perfect French omelet. This was a tricky undertaking but with much practice, and a ton of tutorial watching, my goal was achieved. What I found in all of my delicious training, was that eating omelets every day can get boring. Finding new, interesting ingredients to add was a challenge. I found myself using the same go-to ingredients over and over or I made my work too complicated, adding too many ingredients making for a muddy and overpowering breakfast. In the end keeping it simple was the key.

Ingredients

  • 1 tsp. olive oil
  • 1 cup raw spinach
  • 8 large egg whites (1 cup)
  • 1 cup steamed broccoli florets

Instructions

  1. Heat oil in medium nonstick skillet over medium-low heat.

  2. Add spinach; cook, stirring frequently, for 3 to 4 minutes, or until wilted.

  3. Add egg whites. Do not stir. As eggs set, lift edges, letting uncooked portion flow underneath.

  4. When eggs are almost set add broccoli; cook for 1 to 2 minutes, or until heated through. Gently fold in half.
