Ingredients for Double Chocolate Protein Mug Cake

You’ll need:

  • ½ large banana
  • ¼ cup unsweetened soy milk
  • ½ tsp. pure vanilla extract
  • 1 scoop Openfit Plant-Based Protein Shake
  • ½ tsp. baking powder
  • 2 tsp. cacao nibs, divided
  • Nonstick cooking spray

Half a banana adds sweetness, texture, and some potassium to this protein mug cake. You’ll also add a scoop of Openfit Plant-Based Protein Shake, which is naturally sweetened with stevia and monkfruit, plus some cacao nibs for an extra chocolate-y kick.

To bake, coat a mug with cooking spray, pour in your batter, sprinkle cacao nibs on top, and microwave for two minutes. (If you don’t have a microwave, you can also bake it in an oven-safe mug or ramekin.) The result: a protein-packed snack that’ll satisfy your sweet tooth without a bunch of added sugars. Now grab a spoon and enjoy!
