Just the fragrance of coconut alone evokes images of white sand beaches, palm lined shores, and fruity cocktail indulgences with teeny paper umbrellas by the pool. If you won’t be traveling to a tropical island this summer, doesn’t mean you can’t escape a bit and insert a little bite of paradise into your day. In our recipe for Coconut Pineapple Popsicles we’ve added a a touch of fresh cilantro, giving each pop a flavorful kick.
If cilantro does not agree with you, try basil or mint, or simply omit this ingredient and enjoy fruity tropical popsicle bliss.
Coconut Pineapple Popsicles

- 1 cup cubed fresh pineapple
- ½ cup 100% pineapple juice
- ½ cup canned lite coconut milk
- ¼ cup unsweetened shredded coconut flakes
- 2 Tbsp. chopped fresh cilantro
Place pineapple, pineapple juice, coconut milk, coconut, and cilantro in blender; cover. Blend until smooth.
Pour pineapple mixture evenly into ice pop molds; freeze for at least four hours, or until set.
