Citrus Chia Pudding Parfait
This sweet, tart citrus chia parfait takes minutes to make at night! Pop it in the fridge and it will be ready to enjoy by morning!
- 2 cups unsweetened almond milk
- 2 tsp. raw honey
- ½ cup chia seeds
- ½ cup all-natural granola
- 20 kumquats thinly sliced, reserve some for garnish
Combine almond milk, honey, and chia seeds in a medium bowl; mix well.
Cover bowl; refrigerate for at least 4 hours or overnight, mixing after 2 hours.
Before serving, evenly layer chia seed mixture with granola and kumquats in four parfait glasses.
Garnish with a slice of kumquat if desired.
You can substitute 2 cups chopped orange slices for kumquats.
